Add this mixture to the pan, pouring on top and around the vegetables. Cover the pan with a lid or foil. Place in preheated oven and bake until vegetables are completely tender and the rice is cooked through, about 45 minutes. Check once during baking to make sure the liquid does not dry out, adding more water if necessary +o avoid scorching. Remove cover and place under the broiler for 2 minutes to give the top a bit of colour. 8 Let vegetables rest for 10 minutes. Top with parsley and serve with Organic Plain Yogurt.
